Today I am preparing for guests to arrive at our house. I was taught by my southern Mom that you always make desserts and many other delightful treats made with butter, when people are coming for a visit. So, this morning I began doing just that. The first dish on the list was Oooey-Gooey Butter Cake. As I started mixing I realized I had combined a couple of the ingredients from the filling with a couple ingredients from the crust. In essence, I had messed up and I was going to have to start all over. I put that bowl aside and started again, this time watching the recipe very carefully. As I got ready to put my Butter Cake in the oven I could not get over the fact that I was wasting the other bowl full of ingredients. I decided I would try and bake it as it was and see if it would be any good at all. I figured I couldn't lose at this point. I put my happy accident in the oven along with the Butter Cake. In about 12 minutes I pulled out of the oven what happened to be some of the "yummiest" pound cake I have ever eaten. Who would have guessed it!
Life is alot like that at times, or it could be. Day after day and time after time we make mistakes. We mess up. And, there before us are the remanets of something that looks much different than what we set out to do. I think it all boils down to how we look at things. The old saying goes, "Make lemonade out of lemons". But, so many times we throw our hands up in the air and just give up. I don't know what makes us do that. I don't know if it is frustration, fear, or laziness. Whatever it is, it can keep us from the success God has planned for us. Someone once said to me that you cannot really have success until you failed, because success comes from trying and trying over and over again. Success doesn't come easy, sometimes it comes from a "Happy Accident"! I know that there are those times when failures are not happy and they bring hurt. What you choose to do with those times is what makes the difference. It is all in perspective, point of view, and faith that God loves you and has a plan for you beyond those moments.
Tonight I will enjoy my "Happy Accident" Pound Cake with a few strawberries and whip cream! Today I made a small success out of what looked like a failure at the time. If you are in the middle of a struggle and wondering where this road is going to take you, try to find the "pound cake" in the midst of the mess. God loves you beyond measure!
"Happy Accident" Pound Cake
1 box buttery flavored yellow cake mix
1 block of cream cheese (8 oz.)
1 stick of butter (melted)
2 eggs (beaten)
Mix ingredients together with mixer until creamy. Spread in a greased jelly roll pan. Bake at 350 degrees for 12 minutes or until done in the center. Cut into cubes, squares, or circles with your biscuit cutter and serve with strawberries (or fruit of any kind) and whip cream. Enjoy!
